Purple Haze recipe

Bartender Dennis Šaškovs shares his recipe for a delicious mulled wine and his favourite way to transform it into something even more delicious. Try making his Purple Haze cocktail at home or simple enjoy the mulled wine as is!

INGREDIENTS

Serves one

75ml mulled wine
25ml strawberry purée
25ml pomegranate juice
25ml egg white

METHOD

1. Combine all of the ingredients in a cocktail shaker, add ice and shake until the tin frosts over.
2. Strain the ice from the shaker and then dry shake ingredients until frothy.
3. Strain into a chilled martini glass.

Mulled wine

For the mulled wine

INGREDIENTS

Serves five

1 cinnamon stick
3g whole allspice
A few black peppercorns
2 star anise
30g dried cranberries
100g cup brown sugar
½ sliced orange
750ml red wine

METHOD

1. Combine all of the ingredients in a saucepan and simmer over low heat for 15 minutes. Allow to cool and strain into a jug.
Alternatively, the wine can be cold infused for one or two days and then strained.
